Healthy Vegan Corn Chowder.
To prepare vegan corn chowder here are the ingredients you will need: coconut milk, corn, red bell pepper, paprika, garlic, salt and pep, olive oil, onion, potato, thyme, carrots, broth and celery.
Mix together in a pan olive oil, onion, garlic and season with salt n pep. Add potatoes, carrots, celery and red bell pepper. Cook until the potatoes are soft (around 5 minutes).
Add coconut milk, broth, frozen corn, paprika and thyme. Bring to a boil and cover and simmer for about 15 minutes until the potatoes are tender.
Use whatever blender you prefer and blend until smooth, adjusting seasoning to taste.
You can enjoy it as is or allow it to cool before storing in freezer safe containers.
When you are ready to enjoy, thaw the amount in the fridge the day before and reheat over medium low heat on the stove.
