We are going to start our no bake chocolate coconut cookies by melting together some coconut oil and pure maple syrup in low heat, and whisk in some unsweetened cocoa powder or raw cocoa powder.
Add in some almond butter or peanut butter. Stir together until it is smooth and remove from heat.
Stir in your cooked quinoa flakes (you can also use oats if you don’t have quinoa flakes), add your coconut flakes or shredded coconuts. Stir together until a dough is formed and scoop in bits into little cookie shapes onto your baking sheet.
